The hard part of vegan catering in India is not the mains, it is the dairy hiding everywhere else: ghee in the tadka, butter on the naan, malai in the gravy, curd in the marinade, khoya in the mithai, honey in the dressing and gelatin in the mousse. Every one of those is swapped out below rather than worked around at the counter.
This is cooked as its own line in its own pans with its own oil, so nothing crosses over from the dairy kitchen.

Vegan handling, and the dairy that hides in Indian menus
A vegan line is only vegan if the whole supply chain is checked, not just the recipe. We replace ghee with cold-pressed oil, butter naan with oil-brushed roti, curd marinades with cashew cream, paneer with tofu, khoya sweets with date and nut sweets, honey with jaggery or date syrup, and gelatin with agar. Ice creams, mousses and most bakery items are the usual failure points.
Two less obvious ones: many commercial breads and biscuits carry milk solids, and a lot of pan-Asian sauces carry fish sauce or oyster sauce. We check labels for the consignment rather than assuming.
The vegan line is cooked in its own pans with its own oil, plated on its own counter and labelled at the counter, so a guest can read it rather than ask a steward.

Peak dates need six to ten weeks: October to February weddings and the Diwali corporate season. Everything else is usually comfortable at two to three weeks, and we do take short-notice bookings when the kitchen has capacity.
