What it costs

What a shawarma and mezze counter costs, and what the rate already covers

This counter starts at about ₹450 per plate. What moves the number is the dish selection, the guest count and how long the counter stays open — a counter running for ninety minutes and one running all evening are not the same booking. The per-plate rate is not the food alone: it already carries the chefs at this counter, the stewards, the equipment and the clearance afterwards.

Included in the per-plate rate

  • Chefs and counter cooks for every station
  • Uniformed stewards and an on-site supervisor
  • Chafing equipment, counter facades and crockery
  • Venue recce and counter layout plan before the date
  • Full clearance, waste removal and venue handover

Quoted separately

  • GST on the invoice
  • Travel and logistics beyond Pune-Pimpri-Chinchwad or Lonavala
  • Premium proteins, imported cheese and out-of-season produce
  • Generator or power backup where the venue cannot supply it
  • Extra service hours beyond the agreed window

How many you need

How many counters your guest count actually needs

One live counter per 75 guests is the planning figure we quote across every event. For this one specifically: roughly 75-100 guests per hour per counter.

The mezze is laid out and never queues. The queue is at the rotisserie, so scale means a second cone on the same spit line rather than a second counter.

Read the counters column as counters of every kind, not three of this one. At 250 guests a spread of three to four stations is normal, of which this counter is usually one — two only where it is carrying the meal rather than joining it.

Dietary

Vegetarian, Jain and vegan at the shawarma and mezze counter

The answers below are specific to this counter — the equipment it shares, the ingredient that is usually missed, and what actually changes on the card.

The vegetarian counter stands on its own here: hummus, muhammara, baba ganoush, fattoush, tabbouleh and falafel fried to order need nothing carved to be a full spread.
Jain: the hummus and falafel are made without garlic, and the toum — which is garlic, emulsified — is replaced with a lemon-tahini sauce rather than simply left off the tray.
Vegan: every mezze except the labneh is already vegan, and the pita is baked without dairy or egg.

Placement and timing

Where this counter stands, and when we open it

The mezze goes out at arrival; the rotisserie starts carving once the crowd has built. A cone carved too early dries out, and a cone started too late leaves a queue.

The charcoal rotisserie stands outdoors. Indoors the smoke has nowhere to go and a vertical cone at chest height in a moving crowd is a burn risk.
The rotisserie and the pita oven want to stand together but run on different services — one is charcoal, the other needs a power point. Both have to reach the same corner.
Tahini-based dips split in heat. On an open lawn in summer they are refilled in small batches from chilled holding instead of being laid out in one large bowl at the start.

We set this counter up across Pune City, Pimpri-Chinchwad, Hadapsar-Kharadi, Lonavala to Khandala and Panchgani to Mahabaleshwar, including farmhouse, lawn and resort venues where the power and the cover have to travel with us.

Events this shawarma and mezze counter suits

Not every counter belongs at every function. These are the three it is booked for most, and why.

This counter is drawn from our Lebanese menu — the same kitchen and the same chefs. If you are booking this counter as one part of a larger spread, that page lists the rest of the card it comes from.
