It is a real wood-fired oven that we bring on a trailer, so it needs an outdoor or well-ventilated spot and clearance from the venue. Where that is not possible we run a commercial electric deck oven instead — the same dough, proved for 24 hours, and the same crust.
Pasta is blanched in our kitchen and then finished per portion in the pan at the counter with the sauce, so it is never sitting in a chafing dish going soft. Risotto is par-cooked and finished the same way.
Yes. The pasta we roll for events is eggless semolina dough, the ravioli filling is ricotta and spinach, and tiramisu, panna cotta and cannoli are all made eggless. Tell us at the tasting and the whole card goes eggless.
Mozzarella and burrata are made locally and delivered the same morning, because fresh is better than flown-in for those. Parmesan, gorgonzola and taleggio are imported and are quoted on top of the per-plate rate.
Yes — no onion, no garlic and no potato. The arrabbiata, pesto, burrata and margherita lines all work, and we cook the Jain pasta on a separate burner with separate pans and its own oil.
Six to ten weeks for October to February weddings and the Diwali corporate season. Outside that, two to three weeks is usually comfortable, and short-notice bookings taken when the kitchen has capacity.
