Yes, and we do it by default unless you ask otherwise. The stocks and sauces are made in our kitchen, so the flavour comes from the base rather than from a seasoning packet.
Yes. We carry commercial induction wok rings that reach genuine wok heat, so the counter runs on a power point instead of gas. The chef and the service look the same to a guest.
Yes. Schezwan, hot garlic and burnt garlic dishes are rebuilt on a chilli, ginger and fermented bean base, and the no-onion-no-garlic dishes are cooked on their own wok with their own oil.
The dumplings are folded in our kitchen and steamed at the counter in bamboo baskets through service, so guests get them hot rather than out of a holding tray.
Yes — the full card runs pure vegetarian, and on a pure-veg booking there is no non-veg wok at the event at all, so there is no shared equipment to worry about.
Six to ten weeks for October to February weddings and the Diwali corporate season. Outside that, two to three weeks is usually comfortable, and short-notice bookings taken when the kitchen has capacity.
