How many stations does a Pan Asian spread need?

A Pan Asian menu is a set of counters rather than one buffet, so plan it on the counter ratio: one live counter per 75 guests. Fewer counters than that and the variety turns into a queue.

Do the counters share equipment?

No. The wok, the steamer, the sushi board and the grill are separate stations with separate equipment and staff, which is also what keeps vegetarian and non-veg preparation apart.

Is there a full vegan Pan Asian menu?

Yes, and it is one of the easiest cuisines to do properly vegan — coconut curries, tofu satay, veg sushi, bao, nasi goreng and mango sticky rice, with fish sauce and egg swapped out.

Can the sushi counter run outdoors?

Cooked and vegetarian rolls, yes. Raw fish on an open ground in summer or during the monsoon, no — we will move the raw section indoors or drop it rather than risk the cold chain.

Can we combine Pan Asian with an Indian counter?

That is the most common wedding brief we get. A tandoor and a chaat counter alongside wok, sushi and dim sum covers every age group in the room without turning into a food court.

How far ahead should we book?

Six to ten weeks for October to February weddings and the Diwali corporate season. Outside that, two to three weeks is usually comfortable, and short-notice bookings taken when the kitchen has capacity.

Can we taste the menu before we confirm?
