Nothing below uses a root vegetable, an onion, garlic, a mushroom or any other fungus, honey, or an overnight-fermented batter. Where a dish normally leans on potato, we build it on raw banana or plantain; where it would normally start with an onion-garlic base, it starts with tomato, cashew and asafoetida instead.
This is a full spread rather than a token Jain tray at the end of the buffet. It is cooked on its own line, on its own equipment, by cooks who work Jain functions all through Paryushan.

What makes a catering menu genuinely Jain
A Jain menu is defined by what is left out, and the exclusions are absolute rather than a matter of degree. No root vegetables at all: no potato, onion, garlic, ginger, carrot, beetroot, radish, sweet potato, yam, or turmeric root — uprooting the plant kills it, and the many small lives in the soil around it. No mushrooms or any other fungus. No honey, because it is taken from a living hive. No fermented items — overnight batters, yeast-leavened bread, vinegar and alcohol — since fermentation is understood to breed and destroy micro-organisms. Brinjal and other many-seeded vegetables are avoided by most families, and many avoid leafy greens through chaturmas, the four monsoon months when insect life in greens is at its peak.
Timing is part of the rule, not an extra. Strictly observant guests eat before sunset, so a Jain function is planned around the sunset time for that date and the counters open early enough for everyone to finish. If your programme runs late, we serve the Jain line first as a complete meal rather than asking those guests to wait for the main buffet.
The kitchen has to enforce the separation, because a correct recipe cooked on the wrong pan is not a Jain dish. Jain preparation runs on its own section of the kitchen with its own vessels, ladles, chopping boards, oil and fryer, prepped before any onion or garlic is cut that day. It travels in separately marked crates, is plated on a physically separate counter with its own service spoons, and is served by stewards briefed not to move a spoon between lines. Where a family observes it, we also cook without ginger and green chilli paste and use only ingredients from the day itself.

Peak dates need six to ten weeks: October to February weddings and the Diwali corporate season. Everything else is usually comfortable at two to three weeks, and we do take short-notice bookings when the kitchen has capacity.
