At 1,000+ guests — the size these bookings usually run to — we plan 8+ live counters and 40+ service staff, with 22-30 dishes on the menu and 6 hrs of setup. The ratios behind that are one live counter per 75 guests and one steward per 25 guests, or one steward per 12 guests for plated service. Because Wakad work is mostly society clubhouses, rooftop venues and corporate parks, inside a corporate building the load-in runs on gate passes and a goods-lift slot rather than on our own timing, and service has to start and finish inside the break the office has scheduled.

Sangeet food has to move around a room that is already full of people dancing, so counters go around the edge and the late-night line runs after the performances rather than through them. In practical terms we need counter positions around the edge of the floor, and a late-night service window agreed in advance. We confirm it at the recce before the date rather than on the morning of the event.
