The ratios behind that are one live counter per 75 guests and one steward per 25 guests, or one steward per 12 guests for plated service. Because Swargate work is mostly community halls and mandals, a society or community hall is a shared building — the load-in goes through a common lobby, and we confirm the committee's load-in and music cut-off times before the date so nothing is discovered on the evening.

A destination wedding is catered out of vehicles — kitchen, cold chain, gas, crockery and the brigade all travel — so anything forgotten cannot be fetched and the packing list is built function by function.
